
Rebecca's Brazilian Carrot Cake (Bolo de Cenoura)
The cake that turned neighbours into family.
This Brazilian Carrot Cake (Bolo de Cenoura) is a completely different experience from a typical spiced carrot cake you might be used to. Instead of cinnamon-heavy flavours, this cake is all about a soft, sweet, and incredibly moist sponge made from whole blended carrots - giving it that signature vibrant orange colour and smooth texture.
The real magic happens when it comes out of the oven. While still warm, it’s finished with a rich chocolate sauce poured over the top, soaking slightly into the cake and creating that irresistible combination of fluffy sponge and glossy chocolate topping.
"When we moved to Sydney over 13 years ago, we had no family or friends to reach out to or rely on. Some of our new neighbours were Brazilian, and fast became our dearest friends and essentially our Sydney family. I was enthusiastically introduced to many of the delicious dishes Brazil has to offer. One such sweet treat was the classic staple Bolo de Cenoura, or otherwise known as Carrot Cake."
